Crust for a two-crust 8-inch pie
1 (15-ounce) can pumpkin pie filling or 1 pound pureed fresh pumpkin or other winter squash
1 teaspoon minced fresh thyme, or 1/2 teaspoon ground dried
1 teaspoon minced fresh rosemary or 1/2 teaspoon ground dried
1 teaspoon minced fresh marjoram or 1/2 teaspoon ground dried
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon pepper
1/2 teaspoon cloves
10 eggs
1/2 cup sugar
2 apples
1/4 cup currants
1/2 cup butter, melted
Optional: 6 egg yolks beaten with 2 to 4 tablespoons white wine
