2 leftover baked baking potatoes, or 2 unbaked ( must be baked for one hour)
Cooking time is reduced if using leftover potatoes
1 tbsp extra virgin olive oil
2 mild italian sausages, removed from the casing
1 small onion, finely chopped
4 cloves fresh garlic, finely chopped
1/2 tsp italian herb seasoning
1/2 tsp crushed fennel seeds
1 sweet red pepper, diced
2 tbsp fresh italian parsley, finely chopped
1/4 tsp salt
3/4 cup shredded asiago cheese
1 egg
Salt and pepper to taste
