Mexican Chicken Soup

Enjoy this filling and tasteful soup recipe using the crock-pot. Serving size 6-8.

Here is what you will need:

  • 1 lb. boneless skinless chicken (2-3 large breasts)
  • 1 32 oz. container chicken broth
  • 2 (14.5 oz.) cans diced tomatoes
  • 1 ½ cup chopped carrots
  • 1 ½ cup chopped celery
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 1 cup chopped cilantro
  • 1 ½ cup water
  • ¼ cup tomato paste
  • 2 tsp minced garlic
  • 1 tsp kosher salt
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • ½ lime juiced

Ingredients

1. Combine all the ingredients in a crock pot and cook on high for 3-4 hours or low for 6-8. Cook until the chicken shreds easily and the vegetables are tender. Shred chicken and serve immediately.
